Ingredients

  • 1 lb of ground beef
  • 1 small onion - minced
  • 3-4 tablespoons 
  • 1 pasture raised egg
  • 1 tablespoon of fresh mint - can use dried
  • 1 teaspoon of dry oregano
  • 2 tablespoons of olive oil
  • salt and pepper - to taste
  • garlic powder - to taste
  • 2 cups of white cap mushrooms
  • 2 green bell peppers
  • 2 cups of cherry tomatoes
  • 16 oz. greek yogurt
  • 1 cucumber de-seeded and diced small
  • 1 pkg. of wooden skewers - soaked in water so they don't burn

Directions

  1. Place the beef in a bowl
  2. Add eggs, breadcrumbs, mint, oregano, onions, parsley, salt and pepper and olive oil to the beef. Knead with your hands until all the ingredients are well mixed and blended with the meat.
  3. Cover the bowl and let the meat sit in the refrigerator for about an hour.
  4. Mix yogurt, cucumbers, salt, pepper and garlic. Cover and place in refrigerator.
  5. Remove the beef 10 minutes before cooking. Form into medium size meatballs. 
  6. Mix vegetables with olive oil and salt and pepper. Then skewer all ingredients in desired order.
  7. Heat the grill pan/grill, then place the skewers and cook for about 4-5 minutes on each side. 
  8. Drizzle tzatziki sauce over the top of skewers or serve on the side.
