Ingredients

  • 2 sweet potatoes - raw
  • 1/2 lb of ground beef
  • 4-6 oz of spinach
  • 1/4 cup of onion - raw and diced
  • salt and pepper - to taste
  • smoked paprika - to taste
  • 1/2 cup of organic Greek yogurt 
  • 1/2 cup of white cheddar cheese

Tahini Sauce

  • 1/2 cup on tahini 
  • salt - to taste
  • 1/3 cup of lemon juice
  • 1/4 cup of water
  • 1/4 cup of olive oil
  • 1 tablespoon of parsley

Directions

  1. Bake sweet potatoes until fully cooked, 45 min to 1 hr, depending on the size
  2. In a sauté pan, cook ground beef until fully cooked, then drain fat
  3. Add onions and spinach to cook in the pan with ground beef
  4. Add Greek yogurt and seasonings until mixture is nice and creamy
  5. Cut open the sweet potato and spoon mixture into the potato
  6. Sprinkle cheese over the top and return to oven until the cheese is the melted
